In line with the agro-ecological project of Patoinos, we have implemented our own olive oil press. This development, which is complementary to our vine-growing activity, allows us to promote the olive trees of the domain by producing a local olive oil of great quality. It also helps the whole of the island’s population to resume, after many years, the harvest and production of local olives, for their own individual needs or for local catering.
