Winemaker-oenologist of French-Swiss origin, Dorian was from June 2016 to March 2021 the viticultural manager of the "Patoinos" estate. He has a degree in oenology from the Haute Ecole Spécialisée de Changins (Switzerland).

Dorian Amar is also the author of two books on wine (one popular and one technical) and a book on the trees of Patmos.

From 2014 to 2016, Marika has been responsible for the maintenance of the domain’s trees. She has created the seed-bank of native seeds, in collaboration with the Greek association Peliti. In addition, she sets up gardening workshops in schools, where they learn about composting.

Marika Zisyadis also started the convivium Slow Food Patmos, which she presided until 2016.

Raphaël was the vineyard’s manager for the domain from 2014 to 2016. Since the start, he contributed to the establishment and the development of the agro-ecological project, with the plantation of the vineyard, the creation of different products, as well as the construction of the «Patoinos» winery.
